BHAJANI CHAKALI
here is  100%  marathi recipe / pakakruti  for  bhajani  chakali 

TO MAKE CHAKALI WE HAVE TO MAKE THIS BHAJANI (FLOUR) FOR CHAKALI


Ingredients:
1½ cup Chana Dal
½ cup Ural Dal
½ cup Moong Dal
2 cup white Rice
¼ cup pohe (flattened rice)
50 Grams Cumin seeds (approx 3-4 tbsp)
3 tbsp  Coriander seeds 

Method:
Since we are not going to wash dals (Chana Dal, Ural Dal, Moong Dal), to remove dirt, clean dals with damp cotton cloth separately.
Wash Rice and drain water. Spread over a cloth and let it dry in the shade, not in direct sunlight.
Dry roast each dals separately on medium heat, until golden brown. Dry roast rice and pohe till brown. Then roast Cumin seeds and Coriander seeds until aromatic.
Let all roasted Items cool down. Mix all and grind to fine powder. This Blended Flour is used to make Chakali. 

FOR MAKING CHAKALI 

Ingredients:
1 cup chakali bhajani(Chakali Flour)
1 cup water
1 tsp Asafoetida Powder
2 tsp Sesame seeds
½ tsp Carom Seeds (Ajwain)
1 tbsp Red Chili Powder
1 tbsp Oil
Salt to taste
Oil for deep frying

Method:
In a deep and medium saucepan, heat 1cup water. Add Asafoetida Powder, Sesame seeds, Carom Seeds, Red Chili Powder, Oil and salt. Give a nice stir. Bring the water to boil.
Once water starts boiling, add Chakali Bhajani and mix vigorously. Turn of the heat and cover saucepan with lid for 7-8 minutes.
After 10 minutes, transfer the Bhajani dough to plain surface or in the plate. Use little lukewarm water to knead the dough. Make a soft dough.
Grease Chakali Press utensil from inside with little oil. Stuff enough dough in it. Press and move into circular motion to make Chakali.
Deep fry Chakali on medium high heat, until golden. Drain and put on paper towel to remove excessive oil.
or if you want oil free chakali put chakali in vegetable rinser and rotate for some time excessive oil will be removed
Keep Chakali in Airtight Container after cooling.

alu vadi / aloo vadi / patra

Ingredients:10 Colocasia (Alu leaves)
2 cups Besan 
½ cup Rice flour
1 tsp Dhania powder
1 tsp Jeera powder
2 tsp Red chilli powder
1 tsp goda masala
2 tsp Ginger garlic paste 
(if you do not want garlic you can skip)
¼ tsp Asafoetida/hing
1 tbsp White sesame
1 tbsp Tamarind pulp
1/2 cup roasted and crushed peanuts
½ cup Jaggery
Oil
Salt according to taste


Method:Mix the jaggery and tamarind pulp. Wash the leaves and clean the leaves with moist clean cloth.
Mix all the ingredients except oil in jaggery and tamarind pulp. Add enough water to make a paste which can be spread easily. take each leaf seperately and roll by rolling pin to make all the stems flat.  Place one leaf face down in a clean plate. Spread besan mixture over a leaf in a thin layer. Place another leaf (but opposite direction) over this leaf. Repeat the same procedure for 5 leaves. Tuck in the edges along the length and roll like a scroll. Repeat same procedure with the rest 5 leaves. Steam both rolls for 15 minutes in a cooker without pressure.
Allow to cool completely. Cut into slices and deep fry. Alu vadi is ready.
Serve with sweet sour chutney chutney

ingredients

1 cup  mango pulp 
(ratnagiri or devagad alphonso mango) 
1 cup   sugar
1 cup  cardamom powder

procedure

. take thick bottom pan add mango pulp and sugar and cook on low flame stirring continuously.
. add cardomom powder and cook further till the mixture starts leaving the sides of the pan and sticks to the spatula you are stiriing with.
. tranfer to the steel tray or plain surfece greased with ghee or oil .
. now press with your palms equally putting some ghee to your palm.
. spread to 1/4 inch thickness and immediately cut in to desire shape .
. cool and transfer to air tight jar .can be stored for 1 month.

Kala Vatana Usal

Ingredient-
300  gms  kala  vatana soaked  over night
1/4 medium bunch Fresh coriander leaves (chopped)
1" piece Ginger
6 cloves Garlic
2-3 Green chillies (chopped)
1/2 cup Dry coconut (grated) 

4 tbsps Oil
4 medium sized Onions chopped

1½ cups fresh Coconut
3 tbspn Penguine Malvani Masala 
Salt to taste

Method:
  Soak  kala  vatana over  night  in  plenty  of  water. wash soaked kala vatana in fresh water and cook in pressure cooker with sufficient water and salt for taste  ( apprx. 4-5 whistles) Grind coriander leaves to a paste along with ginger, garlic and green chillies in a blendor and keep aside.  Heat 11/2 tablespoon oil in a pan, add   three fourth quantity of chopped onion, stir-fry till light brown. Add fresh coconut; continue to cook on medium heat, stirring continuously till coconut also changes its colour to light brown.Then add  dry coconut and fry till aromatic. Cool and grind to a fine paste with half a cup of water. Heat remaining oil in a handi, add remaining chopped onion and stir-fry till golden brown. Add the green paste  fry  for  30 seconds then  add 3 tbsp Penguine Malvani Masala mixed with 3 tbsp of water  fry till oil releases. then add cooked kala vatana one cup of water salt bring it to a boil. Add ground paste. Continue to cook for three to four minutes on high heat. cook further on medium heat for two minutes, stirring frequently. check seasoning and transfer to serving bowl garnished with corriander leaves.  Serve hot with vade or aamboli or chapati or bhakari or rice

Aambyache Lonache / Mango pickle

Ingredients : 
1 Kg. raw mangoes (kairi)
150 gm red chilly powder
1 cup mustard powder (Mohrichi dal)
2 tspoon mustard seeds
1/3 cup fenugreek seeds
2 tspoon turmeric powder

1 tspoon khuskhus
2 tspoon aniseeds (badishop)
1 1/2 cup  salt
1 1/2 inch asafoetida  (khada hing)
2 cup oil + 1 tbps oil


Method

Cut raw mangoes in small square blocks.
Heat 1  tbps oil oil in a pan
Now add 1/2 cup fenugreek seeds
Fry fenugreek seeds in oil for 1 minute then add khuskhus and fry for another 1 minute 

dry roast aniseeds (badishop)
cool and grind together fenugreek seeds,khuskhus,aniseeds (badishop)
Also make fine powder of khada Hing



Heat 2 cup oil in a pan
Add 2 tspoon mustard seeds and turmeric to it
Keep it aside for cooling
Dry roast the salt
Take red chilly powder, methi-khuskhus-aniseed (badishop)powder and mustard powder in a vessel
Mix it well
Pour cool oil tempering on it and again mix it
Add raw mango pieces to the mixture
Lastly add salt (roasted) to it and mix.

Transfer the pickle into glass bottle
Pour thin layer of salt over it
Seal the lid with cotton cloth                                                                    

 cure it for minimum 8 days and then start using                

TIP if you do not get khada hing you can use kali hing powder.                              
you can also replace methi powder instead of methi dana.

Shrikhand

Ingredients: 
  • 1/2 ltr full cream  milk
  • 1 tbs curd
  • 300 gms. Sugar
  • 1/2 tsp. cardamom powder
  • Few strands saffron
  • 1/2 tbsp. pista and almond crushed
  • Method:
    • Boil milk stiring  continuously . Do not allow to form malai  on  top.
    • now start cooling  milk by  transfering  it into another  vessel pouring from  long  distance  repeat the procedure till the milk is  warm do not  cool  it  by  setting  aside  for  cooling. the  steam in the hot  milk should  be  removed by  pouring it  from  long  distance so  that  your  curd  will not  leave  water.
    • now mix  in  the  curd  and  do  the  procedure  twice and  keep   aside covered to  set  the  curd. curd  will set in  approximate 7 to 8 hrs depending  on  temprature. 
    • after  the  curd  is  set put  it  in  the  refrigerator for  at  least  4 to 5  hrs to cool  down.
    • Now  tie the  curd  in  muslin cloth and hang  it  in  the  refrigerator for  at  least  6 to  7  hrs 
    • Put hung curd (chakka) into a bowl and add sugar .Mix it.
    • Keep aside for 25-30 minutes to allow sugar to dissolve.
    • Rub saffron into 1 tbsp. milk till well broken and dissolved. Keep aside.
    • Beat well till sugar has fully dissolved into curd.
    • Pass through a big holed strong strainer or  you  pass it  through  puran  yantra. 
    • Mix in cardamom powder and dissolved saffron and half nuts.
    • Empty into a glass serving bowl, top with remaining nut crush.
    • Chill for 1-2 hours before serving.
